    The Last Winter Recipe Before Winter Leaves Us!

    As winter slowly draws to a close, we find ourselves wanting to hold onto the remaining weeks of the season, I mean, maybe not everyone, but I for one, love the cold rain, all curled up in front of the fire with the littles running around like mad men, but that’s just me!

    One of the best ways to do that is through the enjoyment of warming, hearty meals. If you’re a busy family like me, we need recipes that are easy to prepare, yet delicious enough to make us want to linger at the dinner table a little longer. This recipe we are sharing today will do just that – it is comforting, flavourful and a perfect way to embrace the last moments of winter.

    This recipe is a classic French dish, known as Pot-au-Feu, which means “pot on the fire.” It is a simple, yet satisfying dish that utilises root vegetables, leeks, herbs and beef shank to create a rich and flavourful broth that will warm your soul. Here are the ingredients you will need to make this delicious Pot-au-Feu recipe:

    • 700g Beef shank
    • 2 x Carrots
    • 2 x Turnips
    • 1 x Onion
    • 4 x Cloves of garlic
    • 1 x Leek
    • 3 x Celery stalks
    • 5 x Good sprigs of Thyme
    • 2 x Bay leaves
    • 2 x Cups water

    To make this recipe, start by browning your beef shank in a large pot, then add in your vegetables – carrots, turnips, onions and garlic – and let them cook for a few minutes until they start to brown. Next, add in leek, celery, thyme and bay leaves, and pour in enough water to cover everything.

    Bring the broth to a boil, then reduce the heat and let it simmer for hours, until the beef is tender and falls off the bone, and the vegetables are soft and flavourful. Make sure to skim off any foam that may appear on the surface while it cooks.

    To serve, simply ladle the broth into bowls, add in some of the vegetables and a piece of the tender beef. This recipe pairs perfectly with a crusty loaf of bread and a glass of red wine.
